Budget-Friendly Mexican Enchiladas

Try these delicious, budget-friendly Mexican enchiladas; they are very easy to make and taste super good.

  • 1/2 kilos Oaxaca cheese
  • 1/4 onions, finely chopped
  • 1 cup green salsa
  • 1 teaspoon fresh cilantro, finely chopped
  • 200 grams queso fresco, (for sprinkling)
  • 16 tortillas
  • 1/4 cups cream

  • Heat the tortillas in a skillet.
  • Fill each one with a bit of crumbled Oaxaca cheese and let the cheese melt while keeping each enchilada there, being careful not to burn the tortilla. You can roll the tortilla filled with cheese or just fold it in half.
  • Once the cheese has melted, place the enchiladas on each person's plate.
  • Heat the green sauce a little and pour it over the enchiladas.
  • Add a bit of cream, fresh cheese, onion, and cilantro on top.
