Enfrijoladas are a typical Mexican dish. In this recipe, we fill them with cheese to make them a little more original and surprise everyone when they cut them.
Heat a tablespoon of oil in a pan and add the onion, frying it until it is translucent. Blend the onion with the garlic, water, and beans. Return everything to the same pan and sauté the sauce. Season with salt and pepper.
Heat a little oil and fry the tortillas for a few seconds on each side to warm them up. Drain the tortillas on paper towels.
Put a pan with a little bit of beans and heat it.
Dip a tortilla in the bean sauce, fill it with cheese, and place them in the pan with a little bit of beans until the cheese melts.
Serve with cream, cheese, and avocado.
