Cheese-stuffed Chilaquiles

  • 2 cups corn masa flour, for the dough
  • 1 teaspoon baking powder, for the dough
  • salt, for the dough
  • 2 cups water, warm, for the dough
  • 1 1/2 cups Oaxaca cheese, shredded, for the dough
  • vegetable oil, for frying the chilaquiles
  • 8 tomatillos, cooked, for the sauce
  • 1 clove garlic, for the sauce
  • 1/2 onions, for the sauce
  • 2 serrano chiles, seedless, for the sauce
  • 1/2 cups chicken broth, for the sauce
  • 1/2 bunches cilantro, for the sauce
  • 1 tablespoon vegetable oil, for cooking the sauce
  • sour cream
  • panela cheese, grated
  • red onion, finely chopped
  • 1 Sidral Mundet® Apple flavor, of 600 ml

  • In a bowl, mix the corn flour, baking powder, and salt. Then, gradually pour in the warm water and mix. You should obtain a soft and moist consistency.
  • Take a portion of dough, form balls, and pass them through the tortilla press to achieve a thickness of ½ centimeter.To form the chilaquiles: add 4 portions of cheese on the tortilla and cover with another tortilla.
  • Flatten the edge a little and around the cheese. Cut into triangles and fry for 5 minutes or until the stuffed tortilla chips are golden; drain and set aside. Repeat the same procedure until the dough is finished or until you have the necessary amount.
  • For the green sauce: blend the tomatillos, garlic, onion, chilies, chicken broth, and cilantro. Heat the oil in a saucepan over medium heat, pour in the sauce, mix, and cook until it comes to a boil.
  • Arrange the tortilla chips on a plate, drizzle with the green sauce, and decorate with cream, cheese, and onion. Pair your cheese-stuffed chilaquiles with Sidral Mundet® apple flavor!
