Mix the ground beef, chicharrón, onion, garlic powder, cilantro, oregano, salt, pepper, and San Juan® eggs in a bowl.
Form meatballs with your hands, place them on a tray or cutting board, and freeze for 10 minutes.
While the meatballs are freezing, prepare the sauce. Blend the tomato, serrano chili, onion, garlic, and salt. If necessary, add a little water to blend. Set aside.
Heat a pan with a little oil and fry the meatballs, then add the sauce and cook on high heat for about 10 minutes, or until the sauce evaporates a little and the meatballs are fully cooked.
Serve the chicharrón meatballs with the sauce, sprinkle with a little cilantro, and accompany with tortillas.
