Chicharrón Meatballs Recipe

  • 500 grams ground beef
  • 200 grams pork rinds, ground
  • 1/2 cups onion, finely chopped
  • 1 tablespoon garlic powder
  • 1/2 cups cilantro, finely chopped
  • 1 teaspoon dried oregano
  • salt

  • 2 San Juan® eggs
  • 6 tomatoes, for the sauce
  • 1 serrano chile, without stem, for the sauce
  • 1/8 onions, for the sauce
  • 1 clove garlic, for the sauce
  • 1/4 cups water, for the sauce
  • vegetable oil, for frying the meatballs
  • cilantro, for decoration
  • tortillas, for accompaniment

  • Mix the ground beef, chicharrón, onion, garlic powder, cilantro, oregano, salt, pepper, and San Juan® eggs in a bowl.
  • Form meatballs with your hands, place them on a tray or cutting board, and freeze for 10 minutes.
  • While the meatballs are freezing, prepare the sauce. Blend the tomato, serrano chili, onion, garlic, and salt. If necessary, add a little water to blend. Set aside.
  • Heat a pan with a little oil and fry the meatballs, then add the sauce and cook on high heat for about 10 minutes, or until the sauce evaporates a little and the meatballs are fully cooked.
  • Serve the chicharrón meatballs with the sauce, sprinkle with a little cilantro, and accompany with tortillas.
