Chicken Mixiote

Delicious chicken mixiote made with guajillo chili. A Mexican recipe with a different protein. Normally, mixiotes are made with lamb, but on this occasion, we bring you this recipe where they are prepared with chicken and are just as delicious. Be sure to try them.

  • 6 chickens
  • 2 potatoes, medium peeled and cubed
  • 1/2 onions
  • 4 cloves garlic
  • 8 guajillo chiles, roasted and deveined
  • 3 tablespoons vegetable oil
  • 1 pinch cumin
  • 3 cloves
  • salt and pepper

  • In a blender, mix the garlic, chiles, cumin, onion, and cloves. Sauté this sauce in hot oil. Season with salt and pepper to taste.
  • On each maguey leaf or open plastic bag spread out, place a piece of chicken, a little of the sauce, and potatoes. Wrap everything up and tie it very well.
  • Place them in a steamer and remove when the chicken is well cooked.
