Chicken Tacos Drowned in Red Sauce

  • 6 tomatoes, for the sauce
  • 3 serrano chiles, for the sauce
  • 1/2 onions, for the sauce
  • 2 cloves garlic, for the sauce
  • 2 tablespoons vegetable oil
  • 1 chicken breast
  • 1/4 onions
  • 1 garlic
  • 12 corn tortillas
  • 1 1/2 cups vegetable oil
  • salt

  • queso fresco, grated

  • On a griddle, roast the tomatoes, serrano chili, onion, and garlic. Blend for 3 minutes.
  • In a small pot over high heat, heat the oil and fry the sauce, let it cook for 5 minutes. Season and set aside.
  • In a pot with water, cook the chicken with the onion and garlic for 20 minutes; then shred it and set aside.
  • Assemble the tacos with the chicken and in a deep skillet, heat the oil over medium heat; fry the tacos for 5 minutes, until they are golden. Drain them on paper towels.
  • Serve and garnish with sauce, lettuce or cabbage, cream, and cheese.
