Chorizo-Filled Enfrijoladas

  • 2 tablespoons oil
  • 1 onion, medium sliced
  • 5 cloves garlic, roasted and peeled
  • 1/2 cups water
  • 3 cups pinto beans, previously cooked, with broth
  • 1/4 cups oil
  • 12 tortillas, medium
  • 1 cup queso fresco, crumbled
  • 1 avocado, diced for garnish
  • 250 grams chorizo
  • 50 milliliters cream

  • Heat a tablespoon of oil in a skillet and add the onion, frying until translucent. Blend the onion with the garlic, water, and beans. Return everything to the same skillet and sauté the sauce. Season with salt and pepper.
  • Heat a little oil and fry the tortillas for a few seconds on each side to warm them up. Drain the tortillas on paper towels.
  • Cook the chorizo in a skillet and crumble it.
  • Dip a tortilla in the bean sauce, filled with chorizo.
  • Serve with cream, cheese, and avocado.
