Cochinita Pibil in the Oven

  • 1/2 cups water
  • 1 cup orange juice, sour
  • 3 tablespoons apple cider vinegar
  • 100 grams achiote
  • 1/4 white onions
  • 1 clove garlic
  • 1 teaspoon oregano
  • 1/2 teaspoons cumin
  • 20 grams salt
  • 1 1/2 kilos pork, in piece
  • 1 leaf banana
  • 3 black peppercorns

  • Preheat the oven to 190° C.
  • Blend the water with the orange juice, vinegar, achiote, onion, garlic, pepper, oregano, cumin, and salt.
  • Marinate the pork for 30 minutes with the previous preparation and mix well.
  • Bake for 30 minutes at 190° C, covering with banana leaves.
  • Remove the leaves and serve drizzled with the sauce.
