Cochinita Pibil Mixiote

Prepare a cochinita pibil recipe with a different style, but the same classic flavor of this traditional Yucatan dish.   • 1/2 pieces achiote, for the marinade
  • 1 tablespoon oregano, for the marinade
  • 1 teaspoon cumin powder, for the marinade
  • 1 teaspoon cinnamon powder, for the marinade

  • 1 cup orange juice, for the marinade
  • 1/4 cups vinegar, for the marinade
  • 1 kilo pork chump
  • banana leaves
  • pickled onions

  • For the marinade, blend the achiote with oregano, cumin, cinnamon, salt, pepper, orange juice, and vinegar. Pour over the meat and marinate for 2 hours.
  • On a griddle, roast the banana leaves until they soften and change slightly in color. Set aside.
  • Place a sheet of parchment paper, a banana leaf, then the pork meat, and wrap it up.
  • Place the mixiotes in a steamer and cook for 1 hour.
  • Serve with pickled onions.
