  • 1 kilo cod
  • water
  • 1/2 cups olive oil
  • 1 cup onion, finely chopped
  • 1/4 cups garlic, finely chopped
  • 5 tomatoes, ground
  • 1 cup tomato purée
  • 3 cups cod, desalted, soaked, and shredded
  • 1/2 cups parsley , finely chopped
  • 1 cup olives, slices
  • 1/2 cups capers
  • 1/2 cups bell pepper , cod, thin strips
  • telera roll
  • güero chile
  • Sidral Mundet® Apple flavor

  • Place the cod in a bowl, cover with water, and let it rest for 4 hours. Remove the water and soak again for 4 hours. Repeat the process 2 more times, shred, and remove the bones. Set aside.
  • Heat the olive oil in a pot, add the onion and garlic, and cook for 5 minutes. Then add the tomato and puree and cook over low heat for 10 minutes. Finally, add the cod, parsley, olives, capers, and bell pepper and cook for 25 minutes.
  • Cut the bread in half, fill it with the cod and toast the torta for 5 minutes. Set aside.
  • Serve the cod torta and accompany it with yellow chiles and Sidral Mundet® apple flavor.
