Easy Green Chilaquiles

The recipe for how to make green chilaquiles is perhaps the most basic in any Mexican kitchen. This dish is very easy to make, accompanied by cream, cheese, and onion, and will only take you 30 minutes to prepare. It consists of frying tortillas and then bathing them in a delicious green sauce. To make the totopos crunchier, we recommend serving the sauce at the moment.

  • 8 tomatillos
  • 1/4 onions
  • 4 serrano chiles
  • 1 clove garlic
  • 1 bunch fresh cilantro
  • 2 tablespoons vegetable oil
  • tortillas, cut into triangular shapes, from the day before
  • vegetable oil, for frying
  • 1 chicken breast, cooked and shredded
  • sour cream, reduced fat for accompaniment
  • queso fresco, crumbled, for accompaniment
  • onion, fileted

  • In a pot with boiling water, cook the tomatillos, onion, and chiles for 5 minutes.
  • Grind the ingredients you cooked along with the garlic and cilantro until you achieve a smooth texture.
  • In a skillet, add the vegetable oil and fry the sauce, cook for 5 minutes and set aside.
  • For the totopos: first heat a deep skillet and then, heat enough oil to fry the totopos for 3 minutes.
  • For assembly: Place a base with the totopos, the shredded chicken, and add the hot sauce on top. Accompany with cream, cheese, and sliced onion. Enjoy.
