Easy Tacos al Pastor

  • 4 guajillo chiles, rehydrated, without seeds or veins
  • 2 cloves garlic, grilled
  • 1 1/2 tablespoons apple cider vinegar
  • 3/4 cups bitter orange juice
  • 1/4 cups achiote, in paste
  • 1/2 teaspoons cumin powder
  • 1 teaspoon black pepper
  • 1 kilo pork steak
  • vegetable oil
  • taco-sized tortillas
  • onion, finely chopped
  • cilantro, finely chopped
  • pineapple, in small cubes
  • lime
  • guacamole sauce
  • Mundet® Apple Cider

  • Blend the guajillo chili, garlic cloves, achiote, apple cider vinegar, orange juice, cumin, black pepper, and salt until you have a smooth paste. Set aside.
  • Pour the mixture over the pork meat and let marinate in the refrigerator for 1 hour.
  • Heat a grill to high temperature and cook the al pastor meat. Allow a slightly charred crust to form to retain that characteristic flavor of a trompo de pastor. Remove and let rest for 5 minutes.
  • Chop the al pastor meat and serve in tacos with onion, cilantro, pineapple, and green sauce. Accompany with limes.
