4 guajillo chiles, rehydrated, without seeds or veins
2 cloves garlic, grilled
1 1/2 tablespoons apple cider vinegar
3/4 cups bitter orange juice
1/4 cups achiote, in paste
1/2 teaspoons cumin powder
1 teaspoon black pepper
1 kilo pork steak
vegetable oil
taco-sized tortillas
onion, finely chopped
cilantro, finely chopped
pineapple, in small cubes
lime
guacamole sauce

Blend the guajillo chili, garlic cloves, achiote, apple cider vinegar, orange juice, cumin, black pepper, and salt until you have a smooth paste. Set aside.
Pour the mixture over the pork meat and let marinate in the refrigerator for 1 hour.
Heat a grill to high temperature and cook the al pastor meat. Allow a slightly charred crust to form to retain that characteristic flavor of a trompo de pastor. Remove and let rest for 5 minutes.
Chop the al pastor meat and serve in tacos with onion, cilantro, pineapple, and green sauce. Accompany with limes.
