  • 1/4 onions, roasted, for the sauce
  • 1 garlic clove , roasted, for the sauce
  • 2 red bell peppers, seedless and roasted, for the sauce
  • 1/4 cups chipotle chile in adobo sauce, for the sauce
  • 1/4 cups cream cheese, for the sauce
  • 1/2 cups cream , for the sauce
  • 1 cup chicken broth , for the sauce
  • salt , for the sauce
  • pepper , for the sauce
  • Tasty Butter Oil
  • 20 corn tortillas
  • 1 kilo chicken, shredded
  • Manchego cheese, shredded
  • cream , for garnish
  • red onion, sliced, for garnish

  • For the sauce: blend the onion, garlic, bell pepper, chipotle chili, cream cheese, cream, and chicken broth until you get a smooth sauce.
  • Heat a little Sabrosano Butter Oil in a pan, pour in the sauce, and cook for 10 minutes.
  • Heat Sabrosano Butter Oil in another pan and fry the corn tortillas for 3 minutes on each side or until they are soft. Fill the tortillas with chicken, roll them up, and arrange them in a baking dish.
  • Pour the enchiladas with the chipotle chili sauce, sprinkle with cheese, and bake for 15 minutes or until gratinated.
  • Garnish the enchipotladas with cream and red onion.
