  • 1/4 bunches cilantro

  • 3 tablespoons cilantro, finely chopped

  • Soak the fava beans in water overnight. Drain, place in a processor with the garlic, onion, cilantro, salt, pepper, and cumin, and grind until you obtain a well-integrated paste. Set aside.
  • Mix the dough, water, and salt until you achieve a manageable consistency. Divide the dough into portions, fill with fava beans, and shape into gorditas.
  • In a skillet with a little oil, cook the gorditas for 3 to 5 minutes on each side.
  • Blend the tomatoes, serrano chilies, garlic clove, salt, and cumin until you obtain a sauce. Mix with the onion, cilantro, and avocado.
  • Serve the fava bean gorditas and accompany with the salsa.
