  • 1 cup vegetable oil, for filling
  • 1 cup onion, sliced, for filling
  • 3 cups button mushrooms, sliced, for filling
  • 1/4 cups epazote, for filling
  • 1 pinch salt, for filling
  • 1/2 kilos masa dough, nixtamalized, for the dough
  • 1/4 cups wheat flour, for dough
  • 1 teaspoon salt, for the dough
  • 1 teaspoon baking powder, for dough
  • 1/4 teaspoons lard, for dough
  • chicken broth, for dough
  • 2 cups Oaxaca cheese, shredded, for filling
  • vegetable oil, for frying
  • lettuce, chopped, for serving
  • salsa, for serving
  • sour cream, for serving
  • queso fresco, crumbled, for serving

  • For the filling, heat a skillet over medium heat with the oil, sauté the onion with the mushrooms, add the epazote, season with salt, and cook until the liquid reduces. Cool down.
  • For the dough, in a bowl mix the nixtamalized corn dough with the wheat flour, salt, baking powder, and lard, gradually add the chicken broth, knead until you obtain a consistent dough. Set aside.
  • On a board, form balls of approximately 30 grams, with a tortilla press with plastic, flatten and fill with the mushrooms and cheese, close like a quesadilla.
  • In a small pot, heat the oil until it reaches the necessary temperature for frying, fry the quesadillas until they are crispy, remove from the deep fryer and place on absorbent paper.
  • Serve the quesadillas with lettuce, cheese, cream, and salsa; enjoy.
