  • 1/4 cups chorizo
  • 1/4 cups onion, finely chopped
  • 1 cup refried black beans
  • vegetable oil
  • 6 nopales
  • salt
  • 4 slices Manchego cheese, sliced
  • pico de gallo

  • Cook the chorizo in a pan for 5 minutes, then add the onion and cook for 3 more minutes. Finally, stir in the beans and cook for 2 more minutes.
  • Heat a little oil in another pan, add the nopales, and sprinkle with a little salt. Cook for 3 minutes on each side or until well cooked.
  • Spread the refried beans on the nopales, add a slice of cheese, and bake for 3 minutes or until the cheese is melted.
  • Serve the nopal molletes and accompany with pico de gallo.
