Green Tamale Casserole

  • 2 cups chicken broth, for the dough

  • 500 grams chicken breast, cooked and shredded
  • 1 cup Manchego cheese, shredded

  • For the green sauce: cook the tomatoes and chilies in a pot with water and coarse salt over medium heat for 8 minutes. Once the ingredients are cooked, drain the water and blend with the onion, garlic, cilantro, and salt. Heat the oil in a pot over medium heat, cook the sauce for 5 minutes, and season with pepper. Set aside.
  • Soften the lard with a hand mixer for 5 minutes, or until it changes color, then add the baking powder, salt, tamale flour, and gradually pour in the chicken broth. Continue beating until you have a consistent dough, ensuring it doesn't become watery.
  • Place corn husks in a greased baking dish, then pour a layer of dough, followed by a layer of green sauce and a layer of chicken. Cover with more dough and seal with aluminum foil. Bake the tamale casserole at 180° for 45 minutes, or until the dough is cooked. Remember that to keep the tamale from losing moisture, you should place a dish or pot of water in the oven.
  • Remove the green tamale casserole from the oven, take off the aluminum foil, and place the cheese on top. Bake for another 15 minutes or until the cheese melts and turns golden. Serve directly from the baking dish and pour a bit more sauce over the tamale if desired.
