Hidalguense Enchiladas

In Mexico, there are dishes that are very distinct based on the regions where they are prepared. Today we share this recipe for enchiladas from the state of Hidalgo, a dish that you will undoubtedly enjoy very much.

  • 12 corn tortillas
  • 1/2 cups sour cream
  • 1/2 onions, cut into strips
  • 2 tablespoons white vinegar
  • salt
  • 2 ancho chiles
  • 1 cup queso fresco
  • 2 mulato chiles
  • 1/2 cups canola oil, for frying

  • Place the onion with the vinegar and salt. Set aside.
  • Toast the chiles in a skillet without burning them. Let them soak for 5 minutes before removing the seeds.
  • Blend the chiles with a little water and salt until you obtain a smooth sauce.
  • In a skillet, add a little oil and sauté the chile sauce over low heat.
  • Dip each tortilla in the sauce until well coated.
  • Place 3 folded tortillas on each plate.
  • Add onions, cheese, and cream to taste on top of the tortillas.
