  • 500 grams huauzontle
  • water
  • salt
  • 2 cups double cream cheese, in strips
  • flour
  • 4 egg whites
  • 4 egg yolks
  • vegetable oil
  • pasilla chili sauce
  • Mexican red rice, for serving

  • Clean the huauzontles and remove the small stems from the large stem. Set aside.
  • Heat salted water in a large pot and cook the huauzontles for 20 to 25 minutes or until cooked. Remove from the water, place in a bowl with ice, and drain.Arrange the huauzontles in a taco shape, add a strip of cheese, and compact them, removing all the liquid.
  • Dust the huauzontles with flour and coat them thoroughly.
  • Beat the egg whites for 5 minutes with a hand mixer until doubled in size, add the yolks, and mix gently. Dip the huauzontles in the mixture.
  • Fry the battered huauzontles in a pot with enough oil over medium heat for 5 to 8 minutes or until golden brown. Continuously baste with the oil.
  • Serve the battered huauzontles, drizzle with sauce, and accompany with red rice.
