How to make beef birria

  • 6 ancho chiles, deveined, cleaned, and soaked, for the marinade
  • 4 guajillo chiles, deveined, cleaned, and soaked, for the marinade
  • 4 cascabel chiles, deveined, cleaned, and soaked, for the marinade
  • 1/2 onions, in pieces, for the marinade
  • 5 cloves garlic, in pieces, for the marinade
  • 1 cinnamon stick, roasted, for the marinade
  • 1/2 tablespoons cumin, roast, for the marinade
  • 1/2 tablespoons black pepper, roasted, for the marinade
  • 2 teaspoons oregano, roast, for the marinade
  • 2 cloves, roast, for the marinade
  • 1 cup water, for the marinade
  • 3 tomatoes, roasted, for the marinade
  • 2 kilos beef, with bone and fat, in pieces
  • water, to cook the meat
  • 1 pinch salt
  • onion, finely chopped, to accompany
  • cilantro, finely chopped, to accompany

  • For the marinade: blend all the ingredients until you get a smooth sauce.
  • Marinate the beef with the previous mixture in the refrigerator for 4 hours. Remove the meat and reserve the marinade.
  • Cook the meat in a pressure cooker, cover with enough water, season with salt, cover, and cook for 50 minutes.
  • Remove the meat and shred it. Reserve the broth and the meat.
  • Add the meat to a pot, pour in the reserved sauce and the broth. Cook the birria over medium heat for 20 minutes.
  • Serve the meat in a deep plate, pour in the broth, and accompany with cilantro and onion. Serve with corn tortillas, enjoy!
