  • 2 cups lard
  • 1 kilo pork leg, in medium pieces
  • 1 cup evaporated milk
  • 1 cup orange juice
  • 1/2 oranges
  • herb bundle
  • salt
  • corn tortillas
  • onion, finely chopped
  • cilantro, finely chopped
  • lime juice, to accompany
  • green salsa, to accompany

  • Melt the lard in a clay pot over high heat, add the pork leg and fry for 10 minutes.
  • When the meat is slightly cooked, pour in the evaporated milk, orange juice, zest, herbs, and salt. Cook over medium heat for 1 hour, but be careful not to let the meat stick.
  • Serve the carnitas in corn tortillas and accompany with cilantro, onion, and lime juice.
