  • 1/2 cups white vinegar
  • 2 guajillo chiles, rehydrated and seedless
  • 2 ancho chiles, rehydrated and seedless
  • 1 tomato, grilled
  • 1 tablespoon achiote liquid
  • 1/2 onions, grilled
  • 1/2 teaspoons cumin
  • 2 cloves
  • 1/4 cups pineapple juice
  • salt
  • 1 kilo pork steak, in medium cubes
  • vegetable oil
  • tortillas, for garnish
  • onion, finely chopped, for garnish
  • cilantro, finely chopped, for garnish
  • salsa, for garnish
  • lime juice, for garnish

  • Blend the guajillo pepper, ancho pepper, tomatoes, achiote, onion, cumin, cloves, pineapple juice, and salt. Set aside.
  • Place the meat in a bowl, pour the blended sauce over it, and let it marinate in the refrigerator for 1 hour.
  • Cook the al pastor meat in a pan with enough oil over medium heat for 20 minutes.
