Huarache al Pastor

With this recipe, you will learn to prepare pastor-style meat very easily to add it to a delicious homemade huarache. Accompanied by pineapple, onion, cilantro, and a characteristic guacamole to drizzle over the pastor meat. This is a Mexican recipe ideal for enjoying with family, and a weekend craving is always even more delicious when it's homemade.

  • 2 guajillo chiles, soaked for the marinade
  • 1/2 cups orange juice, for the marinade
  • 1/4 cups achiote, for the marinade
  • 1 clove garlic, for the marinade
  • 1/4 onions, for the marinade
  • 1 teaspoon cumin, for the marinade
  • 2 tablespoons vegetable oil
  • 2 cups pork steak
  • 2 cups masa dough
  • salt, for the dough
  • 2 tablespoons lard, for the dough
  • refried beans
  • pineapples, diced
  • 1 cup cilantro, finely chopped
  • onion, finely chopped
  • lime, for serving
  • guacamole, for serving

  • Blend the guajillo chili, orange juice, garlic, onion, cumin, and season with salt and pepper.
  • Pour the previous mixture over the meat and let it marinate for 30 minutes.
  • In a medium skillet, heat the oil and cook the meat until done.
  • Mix the corn dough with lard, season with salt, and knead until all ingredients are fully incorporated.
  • Using your hands, form small balls, place the ball of dough on plastic, cover with another piece of plastic, and using a rolling pin, flatten the dough to form a huarache.
  • On a comal over medium heat, cook the huarache until done on both sides.
  • Place the beans on the huarache, add the pastor meat, pineapple, cilantro, onion, and serve with lime and guacamole.
