  • 1 cup corn masa flour
  • 2 cups San Juan® egg whites
  • 1/4 cups epazote, finely chopped

  • Heat a skillet over medium heat, then spray with vegetable oil and pour in 2 large tablespoons of the mixture the size of a sope, cook for 2 minutes on both sides, then pinch the edges, remove from heat, and set aside.
  • Serve the light sopes with black refried beans, green salsa, red salsa, cooked chicken, and aged cheese.
