Mixed Meats Molcajete

A traditional recipe in restaurants and cantinas in Mexico, the mixed meats molcajete is a preparation of different types of meat (chorizo, beef ribs, chicken breast), with panela cheese and vegetables (nopal, peppers, and onion), presented in a stone molcajete. This preparation is perfect as a snack to watch a sporting event.

  • 3 beef ribs
  • 1 boneless chicken breast
  • 5 chorizos
  • 350 grams panela cheese
  • 5 baby nopales
  • 1 bunch green onion
  • 5 serrano chiles
  • 3 tablespoons vegetable oil
  • 5 soy sauce
  • 3 tablespoons lime juice
  • 250 grams pinto beans, cooked
  • 1 avocado
  • 1 bunch fresh cilantro
  • 12 flour tortillas
  • salt and pepper

  • Marinate the chicken breast and ribs with soy sauce, lime, salt, and pepper. Once well marinated (let the meats rest for 2 hours), grill the meats, preferably using a charcoal grill for this procedure. Cook the chorizo.
  • Marinate the nopal, green onions, and serrano peppers in lime, soy sauce, salt, and pepper. Once 2 hours have passed, grill the vegetables.
  • Grill the panela cheese.
  • Place the meats (chorizo, chicken breast, and ribs) in the molcajete, add the cooked vegetables, cheese, beans, avocado, cilantro, and some lime slices. Serve accompanied by handmade tortillas and homemade salsa.
