Oaxacan memelas are delicious corn tortillas, spread with lard and refried beans; they are served with green or red salsa accompanied by fresh cheese. In this case, it includes meat, giving it a different touch and making it a more complete dish.

500 grams masa dough, for tortilla
2 tablespoons lard
1/2 cups refried beans
500 cups queso fresco
500 grams beef, or tasajo
1/2 cups guacamole, for accompaniment
1/2 cups chapulines, for accompaniment
green salsa, or red, for accompaniment

Form small balls of dough, flatten them to make a tortilla about 10-12 cm in diameter, the tortilla should be thick, between 5-8 mm.
Cook on a griddle over medium-high heat for 15 minutes, flipping them to cook both sides.
Cook the meat and chop it.
Pinch the tortillas at the edges, leaving a border so the beans don't overflow.
Spread lard in the center of the memela, add beans and cheese.
Add meat, chapulines, guacamole, and salsa to taste.
