Pambazo de Suadero

Prepare these pambazos with suadero to celebrate these patriotic holidays with a traditional dish, but with a different twist. The classic adobo of the pambazo pairs perfectly with the tangy flavor of the suadero meat, and when accompanied by cilantro, onion, and lime, you achieve freshness in the dish. To give the suadero a special flavor, you can substitute lime juice for orange juice.

  • For the suadero: in a sufficiently large pot, place the suadero, milk, water, bay leaves, cloves, and sea salt; once it boils, cover and cook for 1 hour and 20 minutes over low heat. Remove the meat from the cooking liquid and chop into small cubes on a cutting board. Set aside.
  • In a pan over medium heat, melt the lard and add the suadero and lime juice; cook until browned. Set aside.
  • For the adobo: blend the guajillo chili, onion, and garlic until you get a thick adobo. In a small pot with hot lard, pour in the adobo and sauté, season with salt, and cook for 5 minutes. Set aside.
  • On a cutting board, cut the pambazo roll in half and, using a brush, coat each side with the guajillo adobo. In a pan with hot oil, brown the pambazo bread over low heat until the adobo changes color. Set aside.
  • Place the pambazo roll on a cutting board, fill it with suadero, serve with sour cream, fresh cheese, onion, and cilantro. Accompany with lime juice and green salsa to taste.
