If you want to give a twist to the traditional pambazo, you have to try this delicious pastor pambazo, whose recipe is very easy to make. Surprise everyone and make your pambazos the favorites.
4 guajillo chiles, soaked, seedless and deveined, for the pambazo sauce
1/4 cups Salsa Huichol® hot sauce, for the pambazo sauce
salt, for the pambazo sauce
1/4 cups water, for the pambazo sauce
5 guajillo chiles, soaked, seedless and deveined, for the pastor
1/2 achiote, for the pastor
1/4 cups apple cider vinegar, for the pastor
1/4 cups pineapple juice, for the pastor
1/4 cups Salsa Huichol® hot sauce, for the pastor
1 teaspoon garlic powder, for the pastor
3 allspice berries, for the pastor
1 teaspoon oregano, for the pastor
salt, for the pastor
600 grams pork steak, in medium cubes
2 tablespoons vegetable oil
4 pambazo rolls
cilantro, finely chopped, for garnish
onion, finely chopped, for garnish

Blend the onion, garlic clove, tomato, guajillo chile, Salsa Huichol® Picante, salt, and water for 5 minutes or until a smooth sauce is obtained. Reserve.
Pour the previously blended sauce into a pot and cook over medium heat for 10 minutes. Keep warm to soak the bread.
Blend the ingredients for the pastor: the guajillo chiles, achiote, vinegar, Salsa Huichol® Picante, pineapple juice, garlic powder, allspice, oregano, and salt for 5 minutes or until a smooth sauce is obtained.
Place the meat in a bowl, cover with the previously blended sauce, and marinate in the refrigerator for 1 hour.
Heat the oil in a skillet over medium heat and cook the meat for 15 minutes. Keep warm.
Cut each of the buns in half, then soak them in the pambazo sauce and brown the soaked bread on a comal over medium-high heat on both sides. Remove from the comal and fill with the pastor meat.
Place the pastor pambazo on a serving plate and accompany with cilantro, onion, and Salsa Huichol® Picante.
