Heat a little lard in a skillet over medium heat. Add the bread for pelonas and brown on both sides until they change slightly in color and have a crispy crust. Drain on paper towels to remove excess fat.
Cut the bread in half, fill with refried beans, shredded beef, lettuce, and sour cream. Serve the poblano pelonas with red sauce to taste.
