  • 1 jar mole sauce, Red Almond Mole from Cocina Mestiza®
  • 4 cups water
  • 4 plantains, ripe
  • 18 corn tortillas
  • vegetable oil, necessary amount
  • 100 grams Cotija cheese, grated

  • Before serving: Fry the plantain slices until golden brown and place on absorbent paper.
  • In a saucepan, mix the Almond Black Mole with the water and heat over medium heat, stirring constantly until it has a light atole consistency. Remove from heat.
  • To serve: Sauté the tortillas one by one.
  • Pass each tortilla through the hot mole and fill them with plantain ovals, fold them, and place them on a platter.
