1 jar mole sauce, Red Almond Mole from Cocina Mestiza®
4 cups water
4 plantains, ripe
18 corn tortillas
vegetable oil, necessary amount
100 grams Cotija cheese, grated

Before serving: Fry the plantain slices until golden brown and place on absorbent paper.
In a saucepan, mix the Almond Black Mole with the water and heat over medium heat, stirring constantly until it has a light atole consistency. Remove from heat.
To serve: Sauté the tortillas one by one.
Pass each tortilla through the hot mole and fill them with plantain ovals, fold them, and place them on a platter.
