  • 1 plantain, ripe, for the dough
  • 2 cups flour, for the dough
  • 1 teaspoon baking powder, for the dough
  • 1/2 cups bacon, for the beans, cut into small cubes
  • 1/4 cups onion, for the beans (finely chopped)
  • 2 cups beans, cooked, without broth
  • 1 sprig epazote, for the beans
  • 1 cup Oaxaca cheese, shredded
  • vegetable oil
  • 2 cups chicken broth
  • 1 cup mole sauce, in paste
  • 1 Mexican chocolate tablet
  • sour cream, for decoration
  • queso fresco, for decoration

  • Cook the plantain with the skin over medium heat. Peel and set aside.
  • Place the plantain, flour, baking powder in a bowl, mix until you have a dough. Set aside.
  • In a pan over medium heat, cook the bacon until crispy, add the onion, and once translucent, add the beans, epazote, and using a masher, mash the beans, cook for 5 minutes, season. Remove from heat and cool.
  • Place a bit of the plantain dough in a tortilla press with plastic. Flatten and fill with beans and Oaxaca cheese, close it like a quesadilla.
  • Heat oil over medium heat and fry the quesadillas. Place on absorbent paper to remove excess fat and set aside.
  • For the mole, heat the chicken broth, add the mole paste, the chocolate, and cook for 15 minutes, stirring constantly until it has a smooth consistency. Adjust seasoning.
  • On a plate, place a mirror of mole, add the quesadillas and drizzle over them, decorate with cream, cheese, and oregano leaves.
