  • 1 tablespoon lard
  • 8 sopes
  • 5 tomatoes, roasted
  • 1/4 onions, roasted
  • 1 clove garlic, roasted
  • 2 morita chiles, rehydrated
  • 1/2 cups chicken broth
  • salt
  • pepper
  • 2 tablespoons lard, for frying the sauce
  • 3 cups pork rinds, chopped
  • 2 tablespoons lard, for frying the beans
  • 1/2 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 4 cups black beans, without broth
  • 1/4 cups bean broth
  • N/A Crema alpura®
  • lettuce, in thin strips
  • queso fresco, grated
  • salsa macha

  • Heat the lard on a griddle over medium heat, place the sopes, and brown for 5 minutes. Set aside.
  • For the pork crackling: blend the tomato, onion, garlic, morita chili, chicken broth, salt, and pepper until smooth. Melt the lard in a pot over medium heat, pour in the sauce, and cook for 5 minutes. When the sauce is boiling, add the pork crackling and cook over medium heat for 10 minutes. Set aside.
  • For the beans: melt the lard in a skillet over medium heat and sauté the onion and garlic for 8 minutes. Add the beans and broth and mash. Cook for 2 more minutes and set aside.
  • Place the sopes on a plate, add the beans and a bit of pork crackling. Garnish with lettuce, Crema Alpura®, fresh cheese, and salsa macha.
