Pork Rind Quesadilla

  • 1 package Tía Rosa® wheat flour tortilla
  • 4 tomatoes
  • 1/2 white onions
  • 1 clove garlic
  • 3 guajillo chiles
  • salt, to taste
  • 1 dash olive oil
  • 150 pork rinds
  • 150 grams Oaxaca cheese

  • Remove the seeds and veins from the guajillo pepper.
  • Cook the tomatoes in a pot with water and a little salt. Add the onion, then the garlic, and incorporate the chiles. Once the vegetables are cooked, place them in a blender and blend.
  • Heat oil in a skillet. Add the pork rind. If there are very large pieces, break the pork rind with a wooden spoon. Add the sauce and stir.
  • Shred Oaxaca cheese.
  • Heat the flour tortillas. Add pork rind and cheese. Serve.
