Remove the seeds and veins from the guajillo pepper.
Cook the tomatoes in a pot with water and a little salt. Add the onion, then the garlic, and incorporate the chiles. Once the vegetables are cooked, place them in a blender and blend.
Heat oil in a skillet. Add the pork rind. If there are very large pieces, break the pork rind with a wooden spoon. Add the sauce and stir.
Shred Oaxaca cheese.
Heat the flour tortillas. Add pork rind and cheese. Serve.
