Potato and Poblano Patties in Red Sauce

These potato patties are delicious and have that homemade touch that only you can give them. With a red sauce made from árbol chili and served with panela cheese, this recipe is very easy, practical, and good for any day of the week. For a healthier version, you can bake your patties with a bit of cooking spray. Don’t forget to top them with more poblano slices and panela cheese for garnish.

  • 4 tomatoes, for the sauce
  • 1 clove garlic, for the sauce
  • 1/4 onions, for the sauce
  • 4 árbol chiles, seedless, for the sauce
  • 1/4 cups fresh cilantro, for the sauce
  • 1 allspice berry, for the sauce
  • 1/2 cups water, for the sauce
  • 1 teaspoon vegetable oil, for the sauce
  • 1 cube Knorr Tomate® tomato bouillon, for the sauce
  • 4 potatoes, cooked and cubed
  • 1/2 cups panela cheese, in cubes
  • 1 cup Poblano chile, roasted and sliced
  • 1 egg
  • 4 tablespoons breadcrumbs
  • 1 tablespoon Knorr® granulated chicken bouillon
  • 1 tablespoon vegetable oil
  • 4 tablespoons Poblano chile, sliced, for garnish
  • 2 tablespoons panela cheese, crumbled, for garnish

  • For the sauce, roast the tomatoes, garlic, onion, and chiles on a griddle.
  • Then blend them together with cilantro, water, and pepper until you get a smooth sauce.
  • Fry the sauce with a teaspoon of oil in a pot over medium heat, once it comes to a boil, season with a cube of Knorr® Tomato Seasoning and cook for 5 more minutes. Reserve.
  • For the patties, in a bowl mash the cooked potatoes until you have a puree. Mix with the panela cheese, slices of poblano pepper, egg, breadcrumbs, and season with Knorr® Suiza chicken broth.
  • Using your hands, form patties and fry them in a skillet over medium heat with the oil, until golden brown on both sides. Drain on paper towels.
  • Serve the patties with the sauce and garnish with more poblano slices and crumbled panela cheese.
