Potato Patties with Mole

  • 4 potatoes, peeled

  • 1 1/4 cups queso fresco, grated
  • 2 eggs
  • 1/2 cups cornstarch
  • 1 jar Doña María® Mole
  • water
  • queso fresco, grated
  • Mexican red rice

  • Place the potatoes in a pot with enough boiling water and cook for 30 minutes or until soft. Drain.
  • Mash the potatoes with a masher, season with salt and pepper, and add fresh cheese, egg, and cornstarch. Mix until well combined and form the potato patties.
  • Cook the patties in a skillet over medium heat with a little oil for 3 minutes on each side or until golden brown. Set aside.
  • Place the Mole Doña María® in a pot over low heat, cook for 5 minutes without stopping to stir until it forms a paste. Then, gradually pour in the water and continue stirring until incorporated. Let it boil until the mole reaches the desired consistency.
  • Serve the potato patties, drizzle with Mole Doña María®, garnish with cheese, and accompany with red rice.
