Red Pork Pozole

  • 600 grams parboiled corn, cacahuazintle
  • 3 cloves garlic, peeled
  • 1 onion, a quarter in chunks for the corn, the rest finely chopped
  • 3 tablespoons salt
  • 1 kilo pork, (solid)
  • 3 tablespoons salt
  • 5 guajillo chiles, deveined
  • 5 ancho chiles, deveined
  • 5 allspice berries
  • 5 radishes, wash, disinfect, and dry. Cut into slices.
  • 1/4 cups Romaine lettuce, wash, disinfect, and dry. Finely chopped.
  • 10 limes
  • 1/2 cups sour cream
  • 10 tostadas

  • In a medium pot, cook the corn along with the garlic, onion, meat, and salt until the corn and meat are well cooked.
  • In a small pot, soften the chiles in hot water for 5 minutes, and blend them with a little water. Add that paste to the corn and meat broth.
  • Remove the meat, shred it finely.
  • Check the cooking of the corn and season.
  • Serve with the meat and the garnishes.
