Rose Mole with Chicken

This mole is traditional from the state of Guerrero, and the pink color comes from the beet. This peculiar dish also has versions with hibiscus and different chiles. With this rose mole recipe, you will learn to make it from scratch, frying almonds, peanuts, chiles, and then grinding everything together.   • 1 cup pine nuts, rose
  • 1 1/2 cups sesame seeds

  • 2 pieces white bread, baguette
  • 1 plantain, sliced and fried
  • 1 stick cinnamon
  • 1 teaspoon star anise pod
  • 5 pieces allspice berry
  • 2 pieces clove
  • 1 cup cranberries
  • 1 beet, small

  • 8 pieces chicken, thigh and drumstick, cooked

  • For the seeds, heat a pot over medium heat, add the lard and start frying the almonds, peanuts, pine nuts, and sesame seeds for a maximum of 5 minutes; it's important not to let them brown too much. Set aside.
  • Heat a pot again over medium heat with lard and sauté the onion, garlic, yellow habanero, güero chile, bread, plantain, cinnamon, anise, allspice, clove, and cranberry for 7 minutes, without browning. Set aside.
  • Place the beet with the skin on a baking sheet and bake for 30 minutes at 200 °C. Remove the skin and set aside.
  • Blend the fried seeds, the mixture with the fried chiles, and the roasted beet; add chicken broth and blend for 8 minutes, until the mole is very smooth.
  • Heat a pot over medium heat and add lard, fry the mole and cook for 30 minutes over low heat, ensuring it doesn't stick.
  • Serve on a plate a mirror of mole, place pieces of hot cooked chicken and drizzle with more mole, decorate with pink pine nuts, rose petals, and fried plantain; accompany with tortillas and a drink.
