  • water
  • 1 kilo skirt steak
  • 1/2 onions
  • 2 cloves garlic
  • 3 tomatoes
  • 1 serrano chile
  • salt
  • 8 black peppercorns
  • 1 1/2 cups potato, cooked, in small cubes
  • 12 corn tortillas
  • vegetable oil, for frying
  • lettuce, in thin strips
  • carrot, in thin strips
  • red onion, pickled
  • avocado, in slices
  • Cotija cheese, grated

  • Place the water, flank steak, onion, garlic, tomato, serrano pepper, salt, and whole peppercorns in a pressure cooker. Cook for 40 minutes or until the meat is well cooked. Remove from the pot, shred and set aside.
  • Blend the cooking broth with the tomatoes, chili, onion, and garlic until everything is well integrated. Set aside.
  • Mix the shredded meat with the potatoes until combined. Fill the tortillas with the meat, fold and fry in enough oil for 3 minutes or until golden brown.
  • Place the golden tacos on a platter and decorate with lettuce, carrot, pickled onions, avocado, and Cotija cheese.
