Soy Chorizo

  • 500 grams soy, texturized dry
  • 20 grams ancho chile, dry
  • 30 garlic, cloves
  • 2/3 cups apple cider vinegar
  • 1 tablespoon pepper
  • 1 tablespoon cumin
  • 1 tablespoon oregano
  • 5 cloves
  • 1 cup water, hot
  • 2 tablespoons salt

  • The soy is hydrated in hot water.
  • The garlic and chiles are sautéed in the oil and soaked in hot water.
  • Blend the chili with the spices and salt (except for the oregano).
  • The soy is squeezed and fried in the same oil used to fry the garlic and chiles.
  • Cook over medium heat for 10 minutes, making sure it doesn’t stick.
  • Incorporate the blended sauce and let it cook for 10 more minutes.
  • Finally, add the oregano.
