500 grams soy, texturized dry
20 grams ancho chile, dry
30 garlic, cloves
2/3 cups apple cider vinegar
1 tablespoon pepper
1 tablespoon cumin
1 tablespoon oregano
5 cloves
1 cup water, hot
2 tablespoons salt

The soy is hydrated in hot water.
The garlic and chiles are sautéed in the oil and soaked in hot water.
Blend the chili with the spices and salt (except for the oregano).
The soy is squeezed and fried in the same oil used to fry the garlic and chiles.
Cook over medium heat for 10 minutes, making sure it doesn’t stick.
Incorporate the blended sauce and let it cook for 10 more minutes.
Finally, add the oregano.
