In a pan, add a little oil, add the mushrooms, and sauté them. Finally, add the spinach and sauté for 1 more minute. (If there's water in the pan, remove it.)
Add the cheese and mix well until the cheese is melted.
Heat the tortillas and add the mixture. Fold them like quesadillas and serve.
