Spinach and portobello mushroom quesadillas are a gourmet way to serve traditional Mexican quesadillas.

  • 500 grams spinach, sliced
  • 2 cups Manchego cheese, grated
  • 300 grams portobello mushroom, sliced
  • 1 clove garlic

  • 12 flour tortillas

  • In a pan, add a little oil, add the mushrooms, and sauté them. Finally, add the spinach and sauté for 1 more minute. (If there's water in the pan, remove it.)
  • Add the cheese and mix well until the cheese is melted.
  • Heat the tortillas and add the mixture. Fold them like quesadillas and serve.
