Stuffed Ancho Chili with Cheese and Huitlacoche

  • 1/2 cups evaporated milk, for the sauce
  • 1 cup sour cream, for the sauce
  • 1 cup La Costeña® homemade chipotle sauce, for the sauce
  • 1 clove garlic, for the sauce
  • 1 teaspoon oregano, for the sauce
  • 1 tablespoon vegetable oil, for the sauce
  • salt and pepper
  • 1 tablespoon vegetable oil, for the filling
  • 1/4 cups onion, finely chopped, for the filling
  • 1 cup huitlacoche, for the filling
  • 1 tablespoon epazote, finely chopped
  • salt and pepper
  • 1 cup Oaxaca cheese, shredded, for the filling
  • 4 ancho chiles, deveined and soaked

  • Preheat the oven to 180°c
  • For the sauce, blend the evaporated milk, cream, La Costeña® Chipotle Homemade Sauce, garlic, and oregano.
  • Heat the oil over medium heat, pour in the sauce, season with salt and pepper, and cook for 10 minutes.
  • For the filling, heat the oil over medium heat in a skillet, add the onion, huitlacoche, season with epazote, salt, and pepper, cook for 5 minutes. Set aside.
  • Stuff the chiles with the previous preparation and add Oaxaca cheese.
  • Bake for 10 minutes.
  • Serve with the chipotle sauce and accompany with red rice.
