Craving a stuffed chili? Try this recipe. It’s made with delicious huitlacoche and Oaxaca cheese, accompanied by a tasty creamy chipotle sauce that will make your mouth water.
1 cup La Costeña® homemade chipotle sauce, for the sauce
1 clove garlic, for the sauce
1 teaspoon oregano, for the sauce
1 tablespoon vegetable oil, for the sauce
salt and pepper
1 tablespoon vegetable oil, for the filling
1/4 cups onion, finely chopped, for the filling
1 cup huitlacoche, for the filling
1 tablespoon epazote, finely chopped
salt and pepper
1 cup Oaxaca cheese, shredded, for the filling
4 ancho chiles, deveined and soaked

Preheat the oven to 180°c
For the sauce, blend the evaporated milk, cream, La Costeña® Chipotle Homemade Sauce, garlic, and oregano.
Heat the oil over medium heat, pour in the sauce, season with salt and pepper, and cook for 10 minutes.
For the filling, heat the oil over medium heat in a skillet, add the onion, huitlacoche, season with epazote, salt, and pepper, cook for 5 minutes. Set aside.
Stuff the chiles with the previous preparation and add Oaxaca cheese.
Bake for 10 minutes.
Serve with the chipotle sauce and accompany with red rice.
