Stuffed Tamale

  • 2 kilos masa dough
  • 2 1/2 liters chicken broth, where it was cooked
  • 1 kilo lard
  • salt
  • banana leaves, as needed, roasted and cut into rectangles of 8 x 10 centimeters
  • 4 chicken breasts, whole, cooked and shredded, for the filling
  • 8 ancho chiles, seedless, for the filling
  • 4 morita chiles, seedless, for the filling
  • 3 chipotle chiles, seedless, for the filling
  • 1 tomato, large roasted, peeled, ground, and strained, for the filling
  • 4 tablespoons lard, for the filling

  • The dough is dissolved with the broth in a large pot that should be at room temperature.
  • After straining, it is put on the heat, and when it comes to a boil, lard and salt to taste are added.
  • It is left over medium heat, stirring constantly for 20 minutes or until the dough is cooked.
  • This is known when a little dough is placed on a piece of banana leaf and it comes off easily.
  • Then, spread about a large tablespoon of dough on the rectangles of banana leaves, placing the filling in the center and folding the side edges of the leaf towards the center; the same is done with the end edges.
  • Then they are tied with a string or with strips of the same leaves and placed lying down in a tamale pot or steamer lined with banana leaves, covered with another layer of banana leaves, the tamale pot is covered, and placed on the heat for one hour or until the tamales come off easily from the leaf.
  • Filling: The peppers are put on the heat with enough water to cover and brought to a boil; they are blended with the same water, and the lard is heated, then the tomato is added, well seasoned until it is thick, ground peppers are added, and it is seasoned very well.
  • Finally, the shredded meat is added.
