Stuffed Yellow Chiles with Shrimp

Stuffed chiles are prepared in different parts of Mexico and the varieties depend on the ingredients consumed in each region, making them a very versatile dish. This recipe for stuffed yellow chiles with shrimp is quite unique, both for the chile used and for its filling, and the combination creates a spectacular and different flavor from what is usually found.   • 1/2 cups fresh cilantro, finely chopped
  • 2 limes, (zest and juice)
  • salt

  • 2 cups shrimp, baby
  • 1 clove garlic
  • 1/4 onions
  • 6 tomatillos
  • 4 morita chiles
  • salt
  • 3 tablespoons vegetable oil
  • 4 güero chiles
  • 3 tablespoons butter
  • 3 tablespoons garlic, finely chopped

  • Marinate the shrimp with cilantro, the juice and zest of lime, salt, and pepper. Refrigerate for 20 minutes.
  • For the sauce: in a pot with water, cook the tomatoes over medium heat with garlic, onion, and morita chili; wait 5 minutes and remove from water. Blend everything together with a little salt.
  • Heat a pan over medium heat, add the oil, and fry the sauce; cook for 5 minutes and set aside.
  • Roast the chiles and then sweat them in a bag for 5 minutes; clean the skin, veins, and seeds, and set aside.
  • Cook the shrimp in a pan over medium heat for 5 minutes and then stuff the yellow chiles with them.
  • To serve, make a bed of sauce, place the chiles on top, and enjoy!
