Traditional Tacos de Canasta

With this recipe, you can have classic tacos de canasta prepared in the comfort of your home with the ingredients you like the most. Give it a try, they are delicious.

  • 1/2 white onions, sliced
  • 500 grams chicken, shredded
  • olive oil
  • salt
  • pepper
  • 300 grams Cotija cheese
  • 100 grams guajillo chile, deveined and hydrated
  • 3 potatoes, cooked and mashed
  • 1 cup tomato purée
  • 2 cups refried beans, dry
  • 1/4 cups chipotle chile
  • 1 cup fresh cilantro, chopped
  • 1 kilo masa dough
  • 2 garlic, peeled
  • 1/2 onions, cut in half

  • In a skillet, sauté the onion, add the chicken, tomato puree, and chipotle puree. Set aside.
  • Blend the chiles in the soaking water, one garlic clove, onion, salt, and pepper. Strain and set aside.
  • Blend the cilantro with one garlic clove, onion, salt, pepper, and a splash of oil. Strain and set aside.
  • Divide the dough into three containers. In one, season only with salt and a little water. In the second, mix the dough with the guajillo chili, and in the third with the cilantro and set aside.
  • Make tortillas of your desired size with the three doughs and set them aside.
  • Fill the tortillas with the stews.
  • Add water to a pot with a splash of oil. Place a steaming rack and put the taquitos inside, cover very well. Let them heat for about 10 minutes.
