Zucchini Flower Quesadillas Recipe

  • 2 tablespoons vegetable oil
  • 1 cup onion, in strips
  • 1 tablespoon garlic, finely chopped
  • 2 árbol chiles, seedless, sliced
  • 3 cups zucchini blossoms, clean, without pistil and chopped
  • 1/4 bunches epazote, finely chopped
  • 500 grams masa dough, prepared, for tortillas
  • 1 tablespoon lard, for tortillas
  • 1 teaspoon baking powder, for tortillas
  • water, for tortillas
  • salt, to season
  • pepper, to season
  • 2 cups Oaxaca cheese, shredded
  • sour cream, to accompany
  • queso fresco, crumbled, to accompany
  • red onion, chopped, to accompany
  • Herdez® Taco Sauce, 453 g

  • Pour the vegetable oil into a hot skillet and cook the onion and garlic over medium heat until they become shiny. Add the sliced árbol chili and lightly brown. Then, add the zucchini flowers and epazote, lower the heat, and cook. You'll notice how the flower starts to lose volume, then season with salt and pepper and remove from heat.
  • Prepare the masa! Mix the prepared corn masa for tortillas with vegetable shortening, baking powder, salt, and enough water until you obtain a moist dough. Mix very well with your hands, incorporating the ingredients.
  • Take a portion of tortilla masa the size of a ping-pong ball, flatten it with a tortilla press, using two pieces of plastic so the masa doesn't stick.
  • Cook the tortilla on a hot griddle for at least 1 minute on each side, but do it over medium-low heat to avoid burning the tortilla. Once both sides are cooked, place shredded Oaxaca cheese on the surface and the sautéed zucchini flower. Close the zucchini flower quesadilla and cook until the cheese melts.
  • Serve the zucchini flower quesadillas hot and accompany with sour cream, fresh cheese, red onion, and Herdez® Taquera Sauce to taste, as it will give the perfect flavor.
