Nopal, Ham, and Queso Panela Patties in Green Sauce

If you like patties, try this delicious option of battered nopales patties with Queso Panela Fud® and Fud® Virginia Turkey Ham, drenched in a green serrano chili sauce with epazote and cilantro; this dish will leave you completely satisfied this Lent.

  • 3 egg whites, for batter
  • 3 egg yolks, for batter
  • 1 cup nopal, diced and cooked, for patties
  • 1/4 cups white onion, finely chopped for the patties
  • 1 cup Fud® panela cheese, diced, for the patties
  • 1/2 cups Fud® virginia turkey ham, diced for the patties
  • 1 pinch salt and pepper, for the patties
  • vegetable oil, for frying
  • 1 liter water, for green sauce
  • 5 tomatillos, for green sauce
  • 2 cloves garlic, for green sauce
  • 1/2 onions, for green sauce
  • 1 serrano chile, for green sauce
  • 1/2 bunches fresh cilantro, for green sauce
  • 2 leaves fresh epazote, for green sauce
  • 1/2 teaspoons ground cumin, for green sauce
  • 1 teaspoon salt, for green sauce
  • Fud® panela cheese, crumbled for serving

  • For the patties, in a bowl beat the egg whites until they are fluffy and form soft peaks, gradually add the yolks one by one without stopping beating. Gently fold in the nopales, onion, Queso Panela Fud®, and Fud® Virginia Turkey Ham, and season with salt and pepper.
  • Heat a skillet over medium heat with the oil and using a spoon, place a little mixture to form a patty. Cook until golden on both sides, remove from the skillet and drain on paper towels. Keep covered.
  • For the sauce, heat a small pot over high heat with the water, boil the tomatoes, garlic, onion, and serrano chili for 30 minutes. Strain the ingredients and blend with cilantro, epazote, cumin, and season with a little salt.
  • Return the sauce to the heat and cook for 5 more minutes or until thickened.
  • Serve the patties on a plate with the sauce and sprinkle with crumbled Queso Panela Fud®.
