  • In a bowl, crumble the panela cheese completely with your hands.
  • Mix the cheese with the egg, breadcrumbs, oregano, and season to taste with salt and pepper.
  • Form patties with the help of your hands and fry them in a pan over medium heat with a little oil. Drain on paper towels. Set aside.
  • For the green sauce, in a pan, heat one tablespoon of oil and fry the onion, garlic, tomatoes, habanero pepper, cilantro, cumin, and black pepper, and cook until the vegetables are softened.
  • Fill with chicken broth, cook until reduced by half, and adjust seasoning. Blend the previous preparation until obtaining a sauce.
  • On a plate, serve a mirror of sauce and place the patties on top, decorate with a fan of avocado, red onion, and panela cheese. Enjoy.
