Make a well with the flour and semolina, placing the egg yolks in the center.
Using a fork, incorporate the dough from the inside out.
Once the ingredients are combined, add a little water.
Knead by hand until the dough is homogeneous, smooth, and elastic.
Let it rest covered with a cloth for 15 to 20 minutes to allow the gluten to develop and relax.
Once the dough has rested, pass it through a mold shaped like chifferi.
Once the dough starts to come out, cut it to the desired length.
Place the formed and cut dough on a tray covered with a cloth until ready to cook.
Boil a pot of water with coarse salt (the proportion is 10 g of coarse salt per liter of water).
Once the water boils, cook the pasta for about 3 minutes.
Remove with a slotted spoon and toss with the bread crumb mixture.
Grate the old bread and toast in a pan with olive oil, garlic, chili pepper, and parsley.
Once golden, add the cooked pasta directly to the pot with a bit of the cooking water.
Add the chopped anchovy fillets to dissolve in the sauce water.
Adjust seasoning. Serve immediately.
