Pasta with crispy bread crumbs

  • 250 grams all-purpose wheat flour
  • 250 grams semolina
  • 4 egg yolks 4 egg yolks
  • water of roses
  • coarse salt
  • 150 grams bread crumbs, homemade old bread crumbs
  • 3 tablespoons extra virgin olive oil
  • 1 clove garlic
  • 1 peperoncino
  • 80 grams fresh parsley
  • 2 anchovy, in oil
  • table salt
  • black pepper powder

  • Make a well with the flour and semolina, placing the egg yolks in the center.
  • Using a fork, incorporate the dough from the inside out.
  • Once the ingredients are combined, add a little water.
  • Knead by hand until the dough is homogeneous, smooth, and elastic.
  • Let it rest covered with a cloth for 15 to 20 minutes to allow the gluten to develop and relax.
  • Once the dough has rested, pass it through a mold shaped like chifferi.
  • Once the dough starts to come out, cut it to the desired length.
  • Place the formed and cut dough on a tray covered with a cloth until ready to cook.
  • Boil a pot of water with coarse salt (the proportion is 10 g of coarse salt per liter of water).
  • Once the water boils, cook the pasta for about 3 minutes.
  • Remove with a slotted spoon and toss with the bread crumb mixture.
  • Grate the old bread and toast in a pan with olive oil, garlic, chili pepper, and parsley.
  • Once golden, add the cooked pasta directly to the pot with a bit of the cooking water.
  • Add the chopped anchovy fillets to dissolve in the sauce water.
  • Adjust seasoning. Serve immediately.
