  • 6 thighs and drumsticks
  • 3 garlic cloves
  • 1/2 onions
  • water
  • salt
  • 3 chipotle chiles, deveined and hydrated
  • 4 ancho chiles, deveined and hydrated
  • 5 tomatoes, roasted
  • 1/2 onions
  • 2 garlic cloves , roasted
  • salt and pepper
  • 2 cups peanuts
  • 1 cinnamon stick, roasted
  • 1/2 tablespoons cumin powder
  • 2 1/2 cups chicken broth
  • vegetable oil

  • Add salt, garlic, and onion to a pot with water. Bring to a boil and add the chicken pieces. Cook for 35 minutes.
  • Toast the peanuts in a pan over medium heat for 8 minutes, stirring constantly. Set aside.
  • Blend the tomatoes, chilies, garlic, onion, toasted peanuts, cinnamon, cumin, salt, pepper, and chicken broth.
  • Heat a saucepan with oil over medium-high heat and add the peanut sauce. Cook for 10 minutes.
