These plantain empanadas are easy to prepare and perfect for satisfying your cravings. Plus, they cook in the Masterchef® Multifunction Air Fryer, which has 10 preset functions at a touch, so they'll be ready in no time.
1/2 cups corn masa flour, precooked, for the empanada dough
1 teaspoon baking powder, for the empanada dough
1 teaspoon paprika, for the empanada dough
1/4 cups Cotija cheese, grated
2 cups asadero cheese, grated
Romaine lettuce, in strips, for serving

Cut the plantain lengthwise, spray with a little cooking spray, season with salt and pepper, and place in the Masterchef® Multifunction Air Fryer at 185 °C for 20 minutes or until soft.
Place the plantain pulp in a bowl and mash with a masher until it forms a puree while the plantain is still hot. Then, add the corn flour, baking powder, paprika, Cotija cheese, and pepper. Mix very well until you achieve a compact consistency, and if necessary, you can add a little vegetable oil to help with the dough mixture.
Form balls the size of a ping-pong ball and flatten with a tortilla press, using plastic to make it easier to handle. Fill the empanada with the asadero cheese and close it like a quesadilla. Secure the edge by pressing with the tip of your fingers.
Place the plantain empanadas in the Masterchef® Multifunction Air Fryer, spray with cooking spray, and fry at 200 °C for 15 minutes. Once ready, serve and accompany with lettuce, sour cream, fresh cheese, and red sauce.
